That’s why we’re pleased to share this fantastic recipe of Marianella Chavez from @bienvenida_salud –it’s fresh, nutrient-dense, and deliciously healthy.

Properties and benefits
Quinoa is considered the only source of complete protein of vegetable origin, which includes all the essential amino acids beneficial to the body, especially Lysine (13%) and Threonine (9%). It also contains monounsaturated and polyunsaturated fatty acids: omega 3 (7%), omega 6 (58%) and omega 9(35%).
As for vitamins, it is rich in B1 (Thiamine), B2 (Riboflavin), B3 (Niacin),B6, B9 (Folic Acid) and Vitamin E. It also has high percentages of mineralssuch as manganese, phosphorus, magnesium, iron and zinc.
Including Quinoa in the diet offers numerous benefits, since it is a source ofcomplete protein that contains all the essential amino acids. We highlight thepresence of omega 3, 6 and 9 fatty acids, which are essential forcardiovascular health. It is a great source of vitamins and minerals that contribute to the properfunctioning of the body and the strengthening of the immune system.
Quinoa and Pumpkin Seed Salad
This quinoa salad is very easy to prepare, refreshing, tasty and with antiiinflammatory and antioxidant properties as well as rich in vegetable protein,vitamins and minerals.
In addition to the properties of Quinoa, purple cabbage,pumpkin seeds and dates have phytoestrogenic action, reduce badestrogens helping us to take care of our hormonal system.
Quinoa salad ingredients
– 1 cup of tricolor quinoa
– 1 cup white quinoa
– 1/2 cup PURPLE CABBAGE
– 1/3 cup white onion
– 1/3 cup green cucumber
– 1/3 cup red bell pepper
and...
– * Sweet & Spicy Pumpkin Seeds:
Clean and dehydrated pumpkin seeds + natural maple honey + cayenne pepper + turmeric powder. Brown the pumpkin seeds in a hot pan, then add the maple honey, to taste. Let them cool until they are crispy. Add the pepper and turmeric powder.
– 3 dates
– 1 handful of Basil leaves
DRESSING: Apple cider vinegar, olive oil, white Tahini, salt and pepper, ground garlic, Dijon.
Quinoa salad preparation
- Cut all the vegetables in small squares, combine with the grained Quinoa (aldente).
- Add the dates cut into small pieces and combine with the dressing.
- Then add the PUMPKIN SEEDS.
- Finally, add the finely chopped basil leaves.
